What are food skills and why are they important?

A culinary skills scale was developed to measure cooking skills in an adult European population, and the relationship between cooking skills and the frequency of consumption of various food groups was examined. The data used in the present study are based on the first (20) and the second (201) surveys of an annual questionnaire on paper and pen (Swiss Food Panel). Data from 4436 participants (47.2% men) with a mean age of 55.5 years (SD%3D14.6, range 21 to 9) were available for analysis. The culinary skill scale was validated through trial and repetition analysis, confirming that this new scale is a reliable and consistent instrument. The pleasure of cooking was the most important indicator of cooking skills, especially for men.

Women had greater cooking skills in all age groups. Culinary skills correlated positively with weekly vegetable consumption, but negatively with the weekly frequency of consumption of pre-cooked foods, while maintaining the diet-related effect of health awareness constant. In short, cooking skills can help people meet nutritional guidelines in their daily nutrition supply. They allow people to choose healthier foods.
